Sweet kiwi berry omelette


  • 125gr of kiwiberries
  • Powdered sugar
  • 4 eggs
  • a pinch of lemon zest
  • a pinch of salt
  • a pinch of cinnamon
  • 25gr of butter



Mash the kiwiberries in a bowl and mix with some powdered sugar and cinnamon, put aside.

Separate the eggs.

In a large bowl beat the egg whites with a pinch of salt. Slowly add 2 tablespoons of powdered sugar.

Mix the egg yolks and the lemon zest and incorporate to the egg whites. Stir until you get a smooth texture.

Heat the butter in a large pan over medium-high heat. Poor in the egg mixture and cook for 3 to 5 minutes until the bottom is golden.

Make a cut to separate the omelette in 2/3 – 1/3. Poor the kiwiberries mixture on the largest part and fold the smaller part over the berry mixture.
